8 lb. semi-boneless shank half smoked ham
2 T. whole cloves
3 c. apple juice
¾ c. firmly packed brown sugar
¼ c. spicy brown mustard
¼ c. bourbon
1 T. cider vinegar

Directions:
Directions:
1. Heat oven to 325º. Score ham all over in a diamond pattern and insert one whole clove into each diamond. Pour apple juice over the ham. Bake for 1 hour 30 minutes, basting every 15 minutes with apple juice and pan drippings the first hour.
2. Meanwhile, combine remaining ingredients in a small bowl and mix until smooth. Baste ham with mixture during last 30 minutes.
3. Remove ham from oven, cover and let rest for 15 minutes before serving.
