- 6 Tablespoons flour
- 8 Tablespoons vegetable oil
- 2 chopped onions
- 1 chopped bell pepper
- 1 cup chopped celery
- 3 cloves garlic, minced
- 1/2 qts. Chicken stock
- package andouille sausage
- 1 roasted deli Chicken (cut up meat into bite Size pieces)
- 1 or 2 cans okra
- 1 or 2 cans diced tomatoes
- 1/2 tspn. thyme
- 3 bay leaves
- 1/4 tspn. ground cloves
- 1 1/4 tspn. allspice
- 1/4 tspn. cayenne pepper
- 1/2 tspn. basil

Salt & Pepper to taste..

Directions:
Directions:
1. Warm oil in large pot, add flour and stir until well mixed. Let flour & oil cook together over low heat,
Stirring often, until the flour is dark caramel brown. This takes quite a while and can't be left or it will burn.
You can use a higher heat but you will have to watch the flour carefully and stir almost constantly.

2. Add chopped onion, celery, and green pepper to roux and cook until they are soft, then add garlic.

3. Add sausage and chicken and stir until sausage is slightly cooked.

4. Add chicken stock a little at a time.
Stir well and bring almost to a boil.

5. Add seasonings and simmer for about 1 hour on low heat.

6. Add canned tomatoes and canned okra.

7. Add chopped parsley if desired.

8. Taste to see if you want to add any more seasonings
.
Cook for about another 20 minutes.

Serve over cooked white rice.
