3/4 cup unsalted butter, softened
1 1/4 cup light brown sugar
2 eggs, room temperature
3 cups all purpose flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 tsp vanilla
1 cup coconut
1/2 cup semi-sweet chocolate chips
1/2 cup white chocolate chips
3/4 cup macadamia nuts

Directions:

Preheat oven 350 degrees. Using hand or stand mixer, beat butter and sugar together til blended. Add eggs and beat. Add flour with baking powder, baking soda and salt a little at a time til fully incorporated. Add vanilla and mix. Remove from mixer and fold in coconut, chocolate chips and nuts. Drop dough by tablespoons on baking sheet lined with parchment paper. Bake 14-16 mins or until lightly browned on the sides. Cool in pan 5 mins before transferring to wire rack to cool completely.
