Ingredients: 1 lb elbow macaroni (Barilla pasta recommended) 1¼ stick of butter ½ cup flour 4½ cups of whole milk 1 teaspoon salt Dash of white pepper 1½ lbs shredded cheese (Mostly use sharp or extra sharp cheddar...but have used others and have mixed)

Directions:Preheat oven to 350º.
Boil the macaroni in a very large pot with lots of water and a ½ handful of salt. Following box directions. Drain the macaroni but DO NOT rinse. Leave in strainer until sauce is ready.
In sauce pot over medium heat, melt butter. Blend in the flour to make a roux. Warm milk in microwave and then add to the roux a little at a time. Turn up the heat to medium high/high and stir continuously until thick. The higher the heat the more apt it is going to burn so stir, stir, stir! Add salt and pepper to taste. Then add the cheese a few handfuls at a time (leave some to sprinkle on top).
Dump the macaroni back into the very large pot and pour the cheese sauce over it and stir all together.
Grease a 1¼ quart casserole with BUTTER. Pour mixture into the casserole and sprinkle the remaining cheese on top.
Bake at 350º until bubbly and brown (less than 45 minutes). |
