2 C sugar
2 1/4 C flour
1/4 C cornstarch
1 tsp baking soda
1/2 tsp salt
2 sticks unsalted butter, room temp
1 large egg
1 large egg yolk
1 tsp vanilla

Preheat 350º
spread sugar into an even layer on a rimmed baking sheet. Toast the sugar stirring eery 15 min until honey beige colored, 45 min to 1 hour. remove pan & let cool for at least 1 hour, stirring every 15 min to speed cooling.
Whisk flour, cornstarch, baking soda & salt in med bowl. Reserve 1/2 C of the toasted sugar in shallow bowl for rolling.
lPlace butter & remaining 1 1/2 C sugar in stand mixer with paddle blade.
Beat on med speed until lightened in color and fluffy, 4 min.
reduce the speed to low & beat in the egg, yolk& vanilla until smooth, about 2min.
add flour & mix on low speed until just combined
Scoop dough into 2 tablespoon balls and roll in sugar.. placed on lined cookie sheets
bake 8-12 nmin, edges are just beginning to brown.
