"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain
This recipe for Pork Chops in BBQ Sauce, by Katherine Netzel, is from The Culling Family Cookbook ,
one of the cookbooks created at FamilyCookbookProject.com. We help
families or individuals create heirloom cookbook treasures.
Sauce: 1/2 cup ketchup 2 tbsp freshly squeezed lemon juice 2 tbsp molasses 2 tbsp minced onions 1-1/4 tsp chili powder 1 tsp minced garlic 1 tsp grated lemon zest 1/2 tsp dried rosemary 1/4 tsp freshly ground black pepper
4 boneless pork loin chops
Combine all sauce ingredients. Bring to a boil in small saucepan, reduce heat and simmer for 2 min. Grill chops brushing sauce generously over meat as cooking. (about 6 min per side) Alternately you can marinate chops in sauce overnight in fridge and then there is no need to cook sauce first.
I changed the rosemary to basil. Was just as good. So use whatever you have. Works for me!
