2-21/2 # red cabbage
2/3 cup red wine vinegar
2 TBS sugar
2 TBS salt
2 TBS bacon fat
1 cup boiling water
2 medium cooking apples (cut into 1/8" slices)
1/2 cup finely chopped onion
1 whole onion pierced with 2 whole cloves
1 bay leaf
3 TBS dry red wine

Directions:

Rinse cabbage and remove tough outer leaves. Shred into ~1/4" wide strips. Place in large mixing bowl. Sprinkle with vinegar, sugar and salt then toss to coat evenly. In a large pan, melt bacon fat over moderate heat. Add apples, chopped onions and cook until slightly browned (~5 minutes). Add cabbage, whole onion and bay leaf. Stir thoroughly and add boiling water. Bring to a boil over high heat stirring occasionally. Reduce heat to lowest setting, cover and cook for 1 1/2 to 2 hours or until tender. Check to be sure cabbage is moist (yes Amanda, moist) If seems dry, add water. When done almost no liquid should remain. Before serving remove whole onion and bay leaf. Stir in wine
