4 Cups Potatoes - diced and cooked
4 Slices of Bacon
1 Medium Onion - finely chopped
Pepper to taste
1 Tbs. Cornstarch
¼ Cup Vinegar
2 Tbs. Water
3 Tbs. Sugar
1 Tbs. Salt
1 Tbs. Minced Parsley

Directions:
Directions:
Cut bacon fine and fry crisp. Remove bacon and brown onion in fat until done. Add vinegar, water, sugar, salt, pepper and corn starch - blend well. Allow mixture to boil. Add potatoes, bacon and parsley. Heat thoroughly and serve.
