3 cups brown sugar
2 Tablespoons butter
2 tablespoons water to moisten
3 cups whole milk
6 tablespoons flour
5 egg yolks
2 teaspoons vanilla
1 pre baked pie crust

Directions:
Directions:
1. Place brown sugar and butter in saucepan. Add 2 tablespoons water to moisten.
2. Cook, stirring constantly until mixture has strands.
3. Whisk milk, flour, and egg yolks until smooth and pour through fine mesh strainer to remove any lumps.
4. Add milk mixture slowly to sugar mixture, stirring constantly, and cook over medium heat until thick.
5. Remove from heat and add vanilla. Stir until combined. Cool to room temperature and pour into cooked pie crust. Refrigerate for minimum 4 hours before serving.

Our family has fond memories of meals shared with Grandma MacNeil and extended family. Her cooking was inspired by her heritage and her community. Grandma MacNeil's parents immigrated from Lithuania and settled in a community which was a cultural mosaic of families from Italy, Scotland, Ireland, Lithuania, and Lebanon.

Butterscotch and caramel are my favourite flavours and this Butterscotch Pie is a fine ending to any meal any time!
