2/3 cup olive oil
2/3 cup sugar
2/3 cup vinegar ( I use apple cider vinegar)
1 tsp. salt

1 small cabbage, chopped
1 onion, chopped
1 green pepper, chopped
1 large carrot, grated

Directions:
Directions:
Boil oil, sugar, vinegar and salt for 1 minute.

Pour over shredded vegetables.

Do not stir until it is cold. Then mix well.

If you have a very large cabbage and want to serve a lot of people, just increase the oil, sugar and vinegar to 1 cup each.
If you want a smaller salad, use part of a cabbage and reduce the oil, sugar and vinegar to 1/2 cup. It can be quite flexible.

I remember my mother serving this coleslaw when I was a child. Then I served it to my family.
