½ bushel tomatoes washed, peeled, cored and cut in quarters
1 cup celery chopped
1 cup onions
Sprig of parsley
½ green pepper
Sugar
Canning salt

Directions:
Directions:
Combine tomatoes, celery, onions, parsley and green pepper in a large Dutch oven or canning pot and cook at least 30 minutes over low heat stirring frequently.

Remove from heat and put mixture through a food mill or sieve into another large pan.

Bring to boil and then fill sterilized quart canning jars with juice and:
2 tablespoons of sugar
1 tablespoon canning salt in each jar

Make sure the outside of edge of the jar is clean so it will seal with a heated lid and a tightened screw cap. Use a clean wet dish cloth to clean the jar.

This was a family activity to make many quarts to store for the winter. We loved to spend time with Grandma and Grandpa in their kitchen in Winona, Minnesota..
