4 Tbsp. Butter or Margarine
3 heaping Tbsp. Flour
˝ gallon Milk
Salt & Pepper to taste.
1-2 cups Peas
3 lbs. New Potatoes

Directions:
Directions: Clean and cut new potatoes. Boil in salted water for 15 minutes until done. Drain off water and set aside.
Next melt butter in a large pot over medium heat. Stir in flour to make a roux. Pour in milk and whisk together with roux. Add in salt and pepper. Let cook on medium-low until thickened. Stir often. If it will not thicken add in cornstarch mixture. Add in peas and cook for 5 minutes. Add in potatoes and cook for 5-10 minutes.
