1 clove garlic 1 ½ tsp salt ½ small onion ¼ tsp pepper 1 stalk celery 2 Tbls olive oil ½ small green pepper 3 Tbls wine vinegar 3 ripe tomatoes 1 cup V-8 low sodium tom juice 1 small cucumber Dash tobasco sauce
Chop vegetables and place all ingredients in blender. Cover and blend 3 seconds or until last slice of cucumber is pulled down. Chill and garnish with seasoned crutons.
