3/4 c. sugar
1/4 tsp. salt
1/3 c. flour
2 c. milk
3 egg yolks slightly beaten
1 1/3 c. flaked coconut
2 tbsp. butter
1 tsp. vanilla
1 - 9" baked pie shell

Directions:
Directions:
In a sauce pan combine flour, salt, sugar, and slowly whisk in milk. Cook over medium heat; stirring until bubbly. Cook 2 minutes and then remove from heat. Stir small amount of hot mixture into eggs (called tempering). Return mixture to sauce pan and cook 2 more minutes. Remove from heat and add butter and vanilla. Add coconut and pour into COOKED crust. Top with meringue and bake at 350º for 12-15 minutes; turning half way through for even browning.

I add 2 extra tbsp. of flour because I prefer a thicker filling. This is also great as just a coconut pudding, but don't add any extra flour for that
