Grandma's Candied Sweet Potatoies Recipe

Ingredients: 3-4 Large sweet potatoes (peeled, cut into chunks) [May also substitute 1-2 large cans sweet potatoes] Water to cover potatoes 1 Cup Sugar, granulated ½ Cup Brown Sugar 1 Tsp. Vanilla ½ Tsp. Cinnamon ½ Tsp. Nutmeg or Allspice

Directions:Place potato chunks in pot and cover with water. Boil potatoes until soft, drain and set aside. Or use 1-2 large cans of sweet potatoes.
Place remaining ingredients in pot with approximately 1-1½ cups of water and bring to rolling boil. Continue to boil, stirring constantly, until liquid begins to make a hair when dropping off the end of the spoon. The sugar mixture is almost at a candy stage. Pour mixture over potatoes and heat on low until potatoes are thoroughly heated.
Best served with pork and other vegetables. |

Notes: This is one of my favorite dishes growing up in Alabama. Grandma Slayton made these all the time and it is a family favorite. This is also a favorite of my Dad's as Grandma made these when he was a kid.
