1Tbsp butter
3 cloves minced garlic
1 med onion diced
2-3 russett potatoes
2 zucchini
3 tomatoes
Salt
Pepper
1/2 tsp dried thyme
1/2c grated parmesan

Directions:
Directions:
Preheat oven 375°
Saute onion in butter, add garlic and saute 3 more minutes. Spread onions in bottom of a baking dish. Slice squash, potatoes, tomatoes about 1/4 inch. Arrange on top of onions [I stack them on edge in rows, like coins], sprinkle with salt, peper, thyme. Cover with foil, bake 40 minutes. Uncover, top with parmesan (and maybe some mozzarella), and bake another 20 minutes.
