For crust:
1 1/2 cups graham cracker crumbs
3 tbsp stevia sweetener
1/3 cup butter or margarine, melted

4 pkg. creamed cheese or Neufchatel cheese, softened
1 cup stevia sweetener
1 tsp. vanilla
4 eggs

Pre-heat oven to 350º F

Mix crumbs, 3 tsp. of stevia and butter or margarine and press into the bottom of pie pan, tart pan or springform pan

Beat creamed cheese choice, 1 cup stevia and vanilla with mixer on low speed until blended
Add eggs one at a time and blend each into the mix just until blended
Pour into your crust of choice
Reduce oven temperature to 300º F and bake for around 50 minutes (center should be almost set) Do not open the oven door!
Turn off the oven and allow the cheesecake to remain in the un-opened oven for 2 hours
Remove from oven, cover with plastic wrap and refrigerate for at least 4 hours
Serve cold with whipped cream or ice cream topping

You can soften the cream cheese in the microwave in a microwave safe bowl for 10 - 15 seconds
Make sure creamed cheese is thoroughly mixed with no lumps before baking
