10 lbs EACH, cubed Boston butt (big fat removed), diced chicken breast, sliced smoked sausage or kielbasa;
7 lbs diced sweet onion;
2.5 lbs EACH diced sweet red peppers & celery;
9 oz minced garlic;
12 quarts of chicken stock
15 pounds converted (parboiled) white rice;
Two #10 cans (105 oz each) crushed tomatoes;
2 C olive oil for sauteeing;
1 Cup Tony Chachere's Creole Seasoning...or more to taste;
salt, black pepper, smoked paprika, hot sauce...to taste;

Directions:
Brown the meat separately and set aside;
Sautee the veggies;
Add chicken stock, tomatoes, & spices;
Bring to a boil and simmer gently until the pork is cooked tender (about 2 hours); Add the chicken and sausage after one hour of simmering
Add the rice and cook for 45 minutes;
Adjust the spices to taste
