1/2 cup butter, softened
1/2 cup creamy or chunky peanut butter (all depends on if you like nuts!)
1/2 cup sugar
1/2 cup light brown sugar, firmly packed
1 large egg
3/4 tsp vanilla extract
1 1/4 cup all purpose flour
3/4 tsp baking soda
1/4 tsp salt

Directions:

Preheat oven to 350º

Using mixer, mix butter, peanut butter, sugar and 1/2 of the brown sugar until fluffy.

Beat egg and vanilla until blended. Mix egg mixture in with flour mixture. Add baking soda and salt and mix on low speed. Sprinkle the rest of the brown sugar in the mix and fold it in lightly.

Roll heaping teaspoons of dough into balls and set 2" apart on ungreased cookie sheet. Then press each ball into 1/4" thick circles.

Bake for 5-8 minutes until lightly browned
