Ingredients:
Ingredients:
1 cup slightly softened butter
1/2 cup packed brown sugar
2 eggs
3 cups flour
1/2 teaspoon baking soda
1/2 cup each as desired:
walnuts, pecans, almonds, pitted dates, chopped, red and green candied cherries, and candied pineapple, diced

Directions:
Directions:
In large bowl, beat together both sugars until blended, scraping the bowl with a rubber spatula. Increase speed to high; until light and fluffy, about 3 minutes. On low speed, beat in eggs until blended. Gradually be in flour and baking soda just until mixed. With spoon, stir in remaining ingredients.
Divide dough into 3 equal pieces. With floured hands, shape each piece into an 8 inch log. Wrap each log in plastic wrap and freeze at least 4 hours or overnight, until firm enough to slice.

Preheat oven 350º.

With serrated knife, cut 1 log crosswise into about 24 slices. Place slices about 2 inches apart on large cookie sheet. Bake 15 to 17 minutes until cookies are golden. Remove cookies to cooling rack. Repeat with remaining logs.

A great alternative to the fruitcake that nobody wants. Except these will be asked for. You can add or subtract nuts/fruit whatever you choose.
