Grandma's Beef Stroganoff Recipe

1 pound wide egg noodles
1/4 C butter divided
1 1/2 lbs. of thinly sliced steak -- I use flank or leftover tri tip
Kosher salt and pepper to taste
1 onion diced
4=5 cloves of garlic minced
1 pound liced mushroom (I use crimini - baby bella)
1/2 C dry white wine or beef broth - which ever you have
1 1/2 C beef broth
1 Tbls. Worcestershire
3 Tbls flour
1/2 C light sour cream
Can garnish with fresh parsley

Cook egg noodles al dente in boiling - salted water according to package
As your pasta water is boiling melt 2 Tbls of butter in a large saute pan
Add the steak in single layer seasoned with salt and pepper. Cook for around 3 minutes then remove steak from pan and set aside - may need to do in two batches
Return pan to heat and add the remaining 2 tbls. butter
Add onions and saute for 3 minutes
Add garlic and mushrooms - cook an additional 5-7 minutes
Add the white wine and deglaze the pan scraping up brown bits from the pan
In a separate bowl whisk beef broth, worcestershire sauce and flour until smooth
Pour the beef broth mixture into the pan
Let simmer for 5 minutes stirring occasionally
Add sour cream and then cooked steak
Season with additional salt and pepper to taste
Serve over egg noodles or rice if preferred
