4 - 8 strips of bacon, cooked*
1 medium yellow onion, chopped
32 oz green beans, fresh or frozen
3 - 4 cloves garlic, minced
salt and pepper to taste

*Turkey bacon can be used. You may need to add ¼ c. olive oil to the beans to simmer.

1. Fry bacon in large skillet. Remove bacon, leaving the grease. Chop bacon into small pieces.

2. To grease, add chopped onion, green beans, bacon pieces, and garlic. Cook over medium high heat for 4 - 5 minutes.

3. Reduce heat to simmer and cover, stirring frequently (about every 5 - 10 minutes).

4. Simmer for 1 hour or until beans are tender.

5. Season with salt and pepper to taste. Serve immediately.

This recipe is a family favorite passed down from my Grandmother to my mom, and now to me. It is so favored that it was a side dish served at our wedding. And what better way to get kids to eat their veggies than by adding bacon to the mix!
