1 lb macarroi- cooked ‘al dente’
1 lb cheese shredded (I use a mix- often I get the finely shredded Mexican blend, Colby, Monterey Jack, mild cheddar, a bit of mozzarella if you like strings. Don’t stress about what kind- whatever you have on hand to shred is fine.)
1 can evaporated milk (@14oz size

Butter a 9X13 pan or a casserole.

Layer macaroni with cheese ending with cheese on top. I add a bitt of ground pepper along the way.

(Up to this point you can do days ahead- just cover and refrigerate.)

Preheat oven to 350.

Shake evaporated milk and pour over pasta.

Bake 45 min -1 hour until bubbly and beginning to brown.

LOW CARB Alternative: I now make this with a combination of chopped cauliflower and broccoli. No need to cook first. Make the same only add just ¼ cup evaporated milk and cook covered for the first 30 minutes. Uncover and cook until melted.
