Ingredients:  
1 cup white sugar
1 med apple, peeled & grated (if doubling, 3 apples is awesome; using Macintosh apples is my personal favourite - nice and moist)
2 cups flour
1 tsp baking soda
1 tsp baking powder
pinch of salt
1/2 tsp vanilla

Coating: 4 tsp sugar + 2 tsp cinnamon
Note: Ratio is important, not the amount. I find the more white sugar vs cinnamon is better (doesn’t burn as much in oven)

1. Cream the margarine, adding the sugar, vanilla, and grated apples. Beat well.

2. Combine other ingredients and add to creamed mixture.

3. Shape in balls and roll in sugar/cinnamon coating. Place on cookie sheet & press with fork.

4. Bake at 375ºF for 10-12 mins.
