2 cups pancake or waffle baking mix (any brand)
2 cups Krusteaz pumpkin spice baking mix - we found this only at Costco.
2 2/3 cups milk
4 tablespoons vegetable oil or apple sauce or apple butter
Extra Pumpkin pie spice. I just add a dash.
3 eggs

1. Heat Belgian waffle iron; grease if necessary. Stir all ingredients until blended.
2. Pour batter by scant cupfuls onto center of hot waffle iron.
3. Bake 3 to 5 minutes or until steaming slows and waffle is golden brown. Carefully remove waffle.

We love pumpkin spice waffles and have had a hard time with the Krusteaz mix. I played with the recipe a lot and found this is my favorite!
