1 onion chopped
1/2 green bell pepper chopped
Lots of garlic (8-10 cloves?)
Some shredded carrot if you have any on hand
2 cans of crushed tomatoes; 2 cans of tomato puree.
2 tablespoons of Italian Spices
Salt
Pepper
Red Pepper Flakes
1 T sugar
1 T vinegar (I use wine vinegar if I have some)
Some red wine

Directions:
Directions:
Saute the onion, bell pepper, garlic, and carrot until soft and flavorful.
Add the remaining ingredients and simmer for 3-4 hours. If you have fresh basil on hand, add some at the end.

Carol's notes say: Papa's sauce is a little of this and a little of that. It changes every time.
