Grandma's Pumpkin Roll Recipe

Sponge:
1 cup sugar
3 eggs
⅔ cup pumpkin
1 tsp baking soda
1 tsp cinnamon
¾ cup flour

Filling:
2 tbsp butter
8 ounces cream cheese
1tsp vanilla
1 cup powdered sugar

1. Preheat oven to 350º. Put wax paper on 15x10x¾ cookie sheet and grease the wax paper.

2. Beat all ingredients for the sponge until smooth. Spread evenly onto wax papered cookie sheet. Bake for 15 minutes. Turn out onto large clean towel (I like the large "tea towels") and roll up in the towel until cold.

3. Beat butter and cream cheese until creamy. Add vanilla and powdered sugar and beat until it reaches whipped frosting consistency.

4. Carefully unroll the sponge. Spread filling and then roll back up. Wrap in tinfoil and refrigerate. Slice into pinwheel rolls for serving.
