7 quarts Black / Greek Olives, pitted & halved
7 quarts Green Italian Olives, pitted & halved
5-8 oz. jars Capers, only big ones
50 Green Peppers – Homemade pickled
12 Red Peppers – Homemade pickled
14 Large Eggplant – Homemade pickled
14 or so large Carrots cut in slices
2 Large pkgs. Celery cut in slices
2 heads fresh Garlic, chopped
Oil – regular salad oil
Oregano – to taste
Red pepper flakes – to taste

Directions:
Directions:
Cut all into bite sized pieces. Peppers and eggplant need to be drained and rinsed before adding. Add garlic, oregano and pepper flakes to taste. Add oil and mix well. After all is fully mixed, store in jars & keep in refrigerator. They will be good for many months. This recipe makes about 30 quarts.
