Pan Sauce:
chopped Onion
garlic
olive Oil
salt & pepper to taste
1 can of tomato paste
5-6 Cans of water from the paste
grated Parmesan or Romano Cheese

Zucchini:
1-2 zucchini squash

Directions:
Directions:
Pan Sauce:
In a frying pan sauté chopped onion and garlic in olive oil. Add salt and pepper to taste. Add 1 can of tomato paste and then add 5 or 6 cans of water. Stir and cook for 20 minutes to ˝ hour.

Slice zucchini, sauté in oil until lightly browned, place on paper towels. In a baking dish layer zucchini, sauce and grated cheese. Continue layers, finish with grated cheese. Bake in 350° oven for about 45 minutes.
Great as a side dish or for sandwiches. Thanks Gram!

While watching a Yankees vs. Red Sox game in the ‘70s with my grandmother, after consuming 4 baked zucchini sandwiches, I asked her “Gram, this is delicious. How do you make it?” She said “It’s very simple: you make a pan sauce, lightly fry the zucchini, and bake.” Thanks Gram!
