8 to 10 large potatoes
1 can evaporated milk (chilled)
½ c. milk (heated, not boiled)
½ tsp. pepper
3 tsp. salt
4 eggs
¼ lb. salt pork (cubed)
1 stick butter
1 medium onion chopped


Directions:
Directions:
Hand grate potato's fine into 1 can of evaporated milk. Beat 1 egg at a time and add to potato mixture. Add salt and pepper and stir.

Sauté salt pork until brown and onions are limp. Add stick of butter and melt. Add to potato mixture add warm milk slowly. Pour mixture into a 9"x13" pan. Bake at 400 degrees for 15 minutes. Lower heat to 375 degrees for 45 min. more until top is golden brown.

Kugela is a potato pudding type dish. It's best served hot with butter and/or sour cream on top.
