Apple Hand Pies Recipe

1 lb. Cortland Apples (I used some frozen ones I had)
1/4 c. brown sugar
2 T. butter
1/2 t. cinnamon
4 T. water divided ( I didn't use water as there was enough moisture from the frozen apples)
1T. cornstarch
2 puff pastry sheets thawed
1 egg white
1 T. cold water
2 T. sugar
1/2 t. cinnamon

Directions:
Directions:
Peel, core and cut apples into 1/2 inch pieces.
In a saucepan over medium heat, combine apples, sugar, butter and cinnamon until butter is melted.
Add 2 T. water, stir to combine, then cover and cook for 10-12 minutes until apples reach desired softness.
In a small bowl, mix together 2 T. water and cornstarch, then add to saucepan. Stir and cover for an additional 1-2 minutes, until apple mixture starts to thicken.
Remove from heat and set aside.
Preheat oven to 375 degrees.
Roll out both pastry sheets, and cut each sheet into 6 3x6 inch rectangles.
Evenly split the apple mixture down the middle of half the rectangles.
In the other six sheets, make 3-5 slits in the puff pastry.
Take each puff pastry sheet with apples and top with a puff pastry sheet that has been cut.
In small bowl, mix together egg white and water.
Brush over the top of each hand pie.
In a separate small bowl, mix together sugar and cinnamon, then sprinkle over the top of each pie.
Cook for 15-18 minutes, until pastry starts to brown.

Might need to cook a little longer to brown. I cooked mine in the air fryer. These were delicious.
