Grandma K's Kolachy Recipe

1 c (2 sticks) unsalted butter, softened
4 oz. Mascarpone or Cream Cheese, softened
1 1/2 c. All purpose flour
1/8 tsp. salt
1/8 tsp. sugar
1/2 c Preserves (apricot, strawberry, etc USE HIGH QUALITY cuz they contain less water)
Powdered Sugar to taste

Put butter in bowl & Beat on Medium Speed until light & fluffy, about 2 minutes
Add Cream Cheese, beat until smooth and well incorporated about 2 minutes
Beat in Flour, salt and sugar until most of the flour is combined
Stir by hand until its all incorporated.

Flatten dough into a disc, wrap in plastic wrap & chill 4 hours or overnight.

Heat oven to 350º
Divide dough in half; return other half to refrigerator
Roll out dough on lightly floured surface to about 1/8" thick
Cut dough into 3" squares with sharp knife
Put Squares on uncreased cookie sheet
Place 1 tsp preserves in center of each square
Fold each corner to the center of the square; press lightly into preserves.
Repeat with remaining dough

Bake until lightly browned, 14-16 minutes
Let sit on cookie sheet 5 minutes to cool.
Remove to cooling racks
Sprinkle with Powdered Sugar while still warm
Cool completely

Grandma Kusinski use to make these every Christmas and they could never be put in the Teacher's Cookie Tins as gifts because we would all eat them! I seem to remember she would use fig apricot filling but you can use your favorite!
A Kusinski tradition that dates back to the 1960s maybe longer!
