2 cups flour
2 teaspoons baking soda
2 teaspoons ground ginger
1 1/2 teaspoons cinnamon
1 teaspoon ground cloves
1 teaspoon salt
1/2 cup vegetable shortening
1/4 cup unsalted butter,at room temperature
1 cup dark brown sugar,firmly packed
1 egg 1/4 cup dark molasses 2 teaspoons grated orange zest
additional granulated sugar for rolling

Oven to 350º. Sift together flour,baking soda,ginger,cinnamon,cloves,and salt into bowl; Combine the shortening butter and brown sugar in a large bowl. Using an electric mixer set on high beat until fluffy. Add the egg,molasses,and orange zest and beat until blended.Reduce speed to low and add the flour mixture,and mix until just incorporated. Cover and refrigerate for 1 hour or as long as overnight. Lightly grease cookie sheets and scoop dough into 1 1/4" balls. Roll in sugar and space 2 " apart on the cooking sheet.Bake for 12 minutes. Let cool for 1 minute and then remove to a cooling rack. Store in airtight container at room temperature for up to 1 week ( if they last that long).

Dont forget that the dough must be chilled and the butter must be at room temp. I usually mix one day and bake the next. An excellent Christmas Cookie.
