1¾ cups sugar
2 cups flour
½ tsp soda
½ cup oil
½ tsp salt
2 eggs, beaten slightly
16oz can crushed pineapple with juice-save about 2 Tbs for frosting
2 tsp vanilla
¾ tsp lemon extract

Frosting:
¼ cup butter
3 oz cream cheese
3 cups powdered sugar
1 tsp vanilla
2 Tbs reserved pineapple juice
1 cup flaked coconut
1 cup chopped nuts

Directions:
Directions:
Preheat oven to 325. Mix dry ingredients. Add remaining ingredients. Pour into oiled 17X11 jellyroll pan. Bake 25-30 minutes.

For the frosting, beat butter and softened cream cheese together. Sift powdered sugar and add with vanilla and pineapple juice. Beat until smooth. Stir in coconut and nuts. Spread on top of bars.
