16 oz cottage cheese
½ tsp salt
1 lb unsalted butter, softened
1 cup raspberry preserves
1 tsp vanilla
Granulated sugar
4 cups flour

Directions:
Directions:
1. Preheat oven to 400º.

2. Purée cottage cheese in blender or food processor. Add butter and vanilla; beat until light and fluffy. Stir in flour and salt until well-blended. Shape dough into ball and refrigerate 30 minutes, until firm.

3. Roll dough into balls the size of walnuts. Roll them in sugar. Place on greased cookie sheets, leaving about 2 inches between. Make indentation in middle of each cookie with thumb, and fill each center with ½ tsp preserves.

4. Bake for 12 to 14 minutes, or until cookies are lightly browned and crispy. Makes 8 dozen cookies.
