⅓ cup shortening
2 egg whites
2 cups sugar
1 tsp baking soda
1 tsp salt
2 cups flour
1¾ cup buttermilk
½ tsp vanilla
1 tsp almond extract

Icing:
½ cup margarine or butter, melted
½ cup flaked coconut
⅓ cup buttermilk
2½ cups powdered sugar

Preheat the oven to 350º. Grease and flour a 10X15 inch pan. In a mixer, beat first three ingredients together. Add baking soda, salt, flour, buttermilk, vanilla, and almond extract. Beat on medium speed for about 2 minutes.

Pour the batter into the prepared pan and bake 25-30 minutes or until light golden brown.

In a mixer, combine all icing ingredients and blend until smooth. Top with the icing while the cake is warm.
