5 lbs masa, makes about 5 dozen
cooked pork, cooked chicken, beans, cheese, jalapeno's (your choice)
corn husks
salt to taste in masa
chili powder
shortening/lard as needed
Directions:
Directions:
Corn husks: rinse and separate. place in large bowl of hot water and soak for 15-20 minutes

Mix knead masa, add melted shortening or lard if needed. Masa should feel soft in hand. Taste for salt and add as needed. For meat tamales, add juice from meat for color and flavor, make sure juice is room temperature. For Bean and cheese or cheese and jalapeno tamales, you can add chili powder to masa for flavor.

Cooking:
Add water to line of bottom of pot, not touching tamales.
Place left over corn husks at bottom of tray on pan before placing tamales
Bring water to a boil
Place tamales standing up or laying down
Turn down stove to medium heat, water should still keep boiling
Cook 1 hour or until masa slides off when tamale is opened
