400g cane sugar
120g coconut oil
20g vanilla extract
120g applesauce
60g plant milk
10g apple cider vinegar
600g AP flour
15g baking soda
10g cream of tartar
10g fine salt
80g fruity pebbles type cereal

Rolling Mix
75g sugar
5g vanilla powder

Directions:
Preheat oven to 375F convection
Line 2 baking pans with silicone baking mats, set aside
In a small bowl, mix together the rolling mix ingredients, set aside
In a large mixing bowl, add the sugar, coconut oil, and vanilla and whisk together with an electric mixer until creamed
Add the applesauce, plant milk, and vinegar and whisk until combined
Add the flour, baking soda, cream of tartar, and salt on top of the wet mixture and gently mix it together with a fork before combining the wet with the dry until well incorporated with a spatula (dough will be stiff and may need mixed by hand)
Add the cereal and mix until combined
Scoop using large green scoop onto prepared baking pans leaving 2" between cookies
Roll each cookie in the sugar mixture and place back on the pan
Press with palm or backside of spatula to aid in spreading
Bake for 14 minutes, rotating pans halfway
Allow to cool on baking racks until cookies are mostly cool before placing directly on rack to finish cooling
