7 cups flour
3 cups water
2 1/2 tablespoons sugar
1 tablespoon salt

1 cup of warm water (95º is optimal to not kill the yeast)
In the warm water add

1/2 teaspoon sugar
1 package dry yeast
2 tablespoons melted lard

In a bowl add the first 4 dry ingredients and mix. When mixing is complete make a big crater in the middle.

The warm water/sugar/yeast and lard will be ready to add once the granules of yeast bloom. Take this and add to your crater to begin mixing the bread. Slowly add three cups of water to flour.

The dough will be sticky and so you will slowly add additional flour while you knead. to determing if you have enough flour, knead the bread and then clean off your hands and thoroughly dry. Set your palm on top of the mixture and count to ten. If your hand does not stick you may proceed to have the mixture rise. If it sticks slowly add more flour and test again.

Place mixture in over or warm area covered with cotton towel and allow to rise to double. About one hour.

Punch down and knead again. Mixture may still be sticky so you may need to add more flower. Perform the palm test again, if clean allow mixture to rise once more. About an hour. When hour is complete, punch and knead dough to remove any air pockets. Divide dough into three pieces and form into a loaf. Place in a loaf pan that is greased with lard.

Bake at 350º for one hour.
