1 pound crushed pineapple
1/2 cup sugar
1 (3 oz.) pkg strawberry Jello
1 (8oz) Light Cool Whip
1 pound low fat small curd cottage cheese

Directions:
Directions:
In a sauce pan mix the crushed pineapple and sugar. Bring to a boil. Add the Jell-O and stir until dissolved. Set the bowl in cool water to cool contents. When cooled add Cool Whip and cottage cheese. Mix with electric mixer until it is thoroughly mixed and fluffy. Refrigerate.
