300g sugar
120g coconut oil
20g molasses
10g vanilla
120g unsweetened applesauce
80g plant milk
480g AP flour
10g baking soda
10g fine salt
6g (2t) ground cinnamon
0.5g (žt) ground cloves
0.5g (žt) ground ginger
200g carrots, grated
100g pecans, finely chopped

Preheat oven to 375F convection

In a large mixing bowl, add the sugar, coconut oil, molasses, and vanilla
Whisk together with an electric mixer until combined
Add applesauce and plant milk, then whisk again until combined
Add flour, baking soda, salt, and spices on top of wet mix
Use a fork to lightly mix the flour mixture together, then use a spatula to fully combine the dry with the wet
Add the carrots and pecans and mix until just incorporated
Scoop using large green scoop to make 12- 108g cookies
Place on baking sheets covered with silicone baking mats leaving 2" spaces between cookies
Flatten with the back of the spatula to aid in proper spread
Bake for 16 minutes, rotating pans halfway
Cool on baking racks, leaving cookies on pans until mostly cooled to finish baking
Frost with half a batch of Cream Cheez Frosting
