2 c.Cooked mashed carrots
4 c. Flour
1/2 tsp.salt
2 c. sugar
2 eggs
2 tsp. vanilla
1 1/2 c. shortening
4 tsp. baking powder
Directions:
Directions:
Mix shortening and sugar together, add eggs and vanilla.
Mix in flour, salt and baking powder

Drop by teaspoon onto greased baking sheet
Bake at 375º for 12-15 minutes

Frost with 4x sugar frosting which is made with lemon juice and rind
Spread while warm
