10 in. cast iron skillet
2-3 tbsp. of oil or bacon grease
1 c. all-purpose flour
¼ c. sugar
4 tbsp. baking powder
¾ tsp. salt
1 c. cornmeal (white or yellow)
2 eggs
1 c. milk or buttermilk (warm)

Directions:

Preheat the oven to 425ºF
Heat a 10 in. cast-iron skillet with oil or bacon grease while mixing the ingredients.
Mix all of the dry ingredients together, then make a well and add eggs and milk, mix well.
Pour into the warmed skillet and bake at 425ºF for 20-25 minutes or until it is brown on top.
Flip onto a serving dish and slice into pie wedges and enjoy!
