8 lbs tomatoes, after cores are removed
1 medium onion
2 small sweet red peppers
5 Tbsp salt
1 1/2 C vinegar
1 1/2 C sugar
1 bay leaf
2 tsp celery seed
1 one-inch stick cinnamon
1 tsp mustard
1 tsp paprika
2 whole cloves (opt)
1/2 tsp white pepper
1/4 tsp mace
cayenne pepper

1. Wash tomatoes, remove cores, chop. Add to this chopped onion and chopped pepper. Remove seed. Bring tomatoes quickly to the boiling point until soft. Put thru fine strainer.
2. Tie spices in a bag, allow plenty of room.
3. Place spice bag in sieved tomatoes. Boil rapidly until mixture has been reduced at least one-half. (If this takes longer than 45 minutes, the catsup will be dark.)
4. Add salt, vinegar, sugar and boil for 5 minutes.
5. Add cayenne pepper, if desired
6. Pour boiling hot into sterilized bottles.
