6 oz. Zwieback toast crumbs (reserve ⅔ c. for top)
1c. sugar
1 tsp. cinnamon
½ c. melted butter

Preheat oven.

Mix Zwieback with 1 c. sugar, cinnamon, and butter. Reserve ⅔ c. for top.
Press into bottom and sides of a 9 inch springform pan.
 

Filling

6 eggs
1 ¼ c. sugar
1 tsp. salt
juice of 1 lemon
rind of 1 lemon
1 ½ c. cream
2 ¼ lb. farmers' or bakers' cottage cheese
⅜ c. flour
¼ c. chopped nuts
Directions:
Directions:
Beat eggs, add sugar and beat until light. Add salt, lemon juice, lemon rind, cream, cheese and flour. Beat thoroughly and strain through a fine sieve. Pour into pan. Sprinkle top with ⅔ c. crumbs and nuts.

Bake for 1 hour until center is firm. Turn off heat, open door and let stand in oven 1 hour until cooled.
