Use light or Medium Amber Syrup

Directions:
Directions:
Use a high sided pan and bring syrup to a boil 240º and try to be precise.
Do not stir while boiling.
If starts to foam to much add a small pad of butter.

Cool to about 180º (optional).
You can stir as soon as bubbles have settled.
Cool sugar tends to be finer grained and softer.

Use metal small pan to take one cup at a time out and stir until crystals form .
When brown pour into molds. You do not have to clean pan between stirs.

Let set.
