1 T pumpkin puree
1 egg yolk (or egg substitute)
1/2 t maple syrup or 1/4 t vanilla
2/3 c blanched almond flour
3 1/2 T powdered sugar
1/4 t cinnamon
pinch nutmeg
pinch allspice
pinch clove
pinch ginger
(or use 1/2 t pumpkin pie spice in place of all spices)
pinch salt

Topping: 2 t granulated sugar
pinch cinnamon

Add in ingredients and mix until crumbly. Use hands to make ball out of the crumbly dough. Split dough into 2 smaller balls and set aside. Coat plate with baking spray, place 1 ball on it then shape into cookie. Microwave for 20 seconds, check it, microwave again for 20 seconds, check it, do so until done.
