5 to 6 medium white potatoes (or red)

White Sauce:
5T butter
5T flour
1tsp Joe's season
1c ham broth (Use this when you're prepping a ham with this dish. Take some of the broth/drippings from the ham. Gram always said the best ham is the Smithfield picnic ham and she is correct) If no ham juice, just double the milk
1c+ milk or half & half
2 c. mozzarella cheese shredded (Gram used Cheddar if you don't have mozzarella)

- In a large pot boil the potatoes with the skins on. Cook till tender. Cool then peel the skins off. Slice thin when cooled.
- Make white sauce: Melt the butter add the flour and Joe's seasoning stirring into a roux mixture. Stirring constantly - slowly add 1c ham broth and 1c milk (add more if necessary for right consistency). Stir till mixture gets thick but not too thick just soupy.
- Layer the sliced potatoes and add some shredded mozzarella cheese. Then pour some of the sauce over that layer then start another layer and continued to make different layers with the cheese the sauce and the potatoes.
- Bake at 400º for at least 45 minutes or until potatoes are completely warmed through and done.
