11/2 Lbs. Chicken breast, boneless, skinless
1/4 cup shredded Parmesan
1 cup Panko breadcrumbs
2 eggs, beaten
1/2 cup Marinara sauce
1/2 cup mozzarella cheese
A handful of fresh basil leaves for garnish

Directions:
Directions:
1). Line the air-fryer basket with foil and preheat the air-fryer to 360º

2). Cut the chicken breast in half and place them between two pieces of plastic wrap and gently pound with the flat side of a meat mallet. Pound each piece into thin pieces.

3). Set up a plate with the Panko and parmesan.

4). Whisk eggs in a bowl until frothy. Now dunk each chicken breast into to egg and then into the breadcrumb mixture.

5). Arrange chicken into the air fryer basket, shaking off any excess bread crumbs. Cook for 6 minutes, flipping halfway through with tongs. Cook in batches if needed.

6).Once golden, spread a spoonful of marinara sauce on top of each chicken. Sprinkle mozzarella cheese on top and continue cooking for an additional 4 minutes until cheese melts and the internal temperature reads 165º

7). Transfer to a serving dish. garnish with basil and serve warm
