5 cups all purpose unbleached flour
1 tsp baking soda
1 tsp cream of tartar
1 tsp fine sea salt
1 cup unsalted butter at room temperature
1⅓ cups sugar divided
1 cup powdered sugar
1 cup vegetable oil
2 large eggs at room temperature
2 tsp vanilla
sprinkles for decorating

1. position the oven racks in upper and lower thirds of oven preheat the oven to 350ºF line 2 baking sheets with parchment paper

2. in a medium bowl whisk together flour, baking soda, cream of tartar and salt set aside

3. in a large bowl, beat butter, 1 cup sugar and the powdered sugar with an electric mixer on medium speed until fluffy and pale in color, scraping the bowl often add oil, eggs and vanilla, beating on medium low speed until smooth and somewhat uniform in texture like thin cake battergradually add flour mixture, beating on low speed until incorparated dough will be very soft

4. using a 1-tbsp scoop, portion dough onto prepared baking sheets spacing 2 inches apart

5. pour remaining ⅓ cup sugar onto a plate dampen the bottom of a drinking glass with water dip bottom of glass in sugar to coat; flatten each cookie about a ¼ - inch thickness, coating the glass with more sugar as needed, sprinkle flattened cookies with colored sprinlkes

6. bake 11 minutes rotating sheets from top to bottom and front to back abot half way through let cool completely
